Sweet Cicely – A delightful Spring and Autumn herb
Sweet Cicely (Mhyrris Odorata) is our favourite member of the carrot family, the Apiaceae. This is a difficult family for the novice forager as it contains a number of toxic plants. However, it also contains a plethora of delightful herbs that we use in the kitchen regularly; parsley, coriander, fennel, anise and lovage are all members of this family.
Sweet cicely is similar in flavour to fennel and anise, with a light liquorice aroma. Once lacto fermented, the liquorice flavour is taking over and is amazing.
The leaves of Sweet Cicely are soft and feathery, with telltale white splotches in the centre of the fronds.
Sweet Cicely makes a lovely garnish, but is also fantastic as a herb for pickling and marinating. It is also great in salads, and we really like using the stems for Vietnamese summer rolls for a bit of crunch and anise flavour. Its sweet nature is also fantastic for desserts; it is a lovely accompaniment for rhubarb in a crumble.
