The Mushroom Worth Dancing For
Our Fresh Maitake Mushrooms (also known as Hen of the Woods) are cultivated to bring a revered wild delicacy into your kitchen year-round. In the wild, this mushroom is rare and fleeting – but thanks to sustainable cultivation, you can enjoy its full-flavoured brilliance at any time.
Why Chefs Love Maitake
With its meaty texture, skunky-earthy aroma, and intense umami profile, Maitake is a go-to mushroom in professional kitchens. It’s:
A Seasonal Legend, Grown Year-Round
In the wild, Maitake appears from September to November at the base of oak and chestnut trees, often reappearing each year. While wild finds are rare, our cultivated version delivers consistency in both quality and nutrition – a must for kitchens wanting reliable gourmet ingredients.
Fun Fact:
“Maitake” means “Dancing Mushroom” in Japanese – it’s so prized that people dance upon finding one. Our founder Maxime once found a 35kg wild Maitake in his first foraging year – definitely dance-worthy!
Below is a picture of the very first wild Maitake/Hen of the Woods (35kg from a single tree) discovered by Maxime during his first year in his foraging Journey, certainly cause for dance!
