In Japan, Sakuras hold such a significant value for their sheer beauty and elegance and their cultural association with hope and renewal.  They are also a gourmet ingredient, which our fine dining chefs are cherishing for both savoury and sweet recipes.

Albeit foraged from ornamental cherry trees, Sakuras flavour profile is akin to roses and almonds.

Our chefs generally pickle the Sakuras to improve their flavour and extend their shelve life. this is a very simple process involving:

  1. A quick washing using preferably salty water followed by a drying process the Sakuras using tea towels.
  2. The Sakuras are then layered in a tub with salt and a little Ume vinegar for 3 days.
  3. Once pickled, the Sakuras are then airdried and then stored in a container with some more salt.

 

Seasonality

The Sakuras in the buds season is very short lasting generally over a two weeks period toward the end of March and beginning of April.
